Tasting Cardinale D.O.P, in the nose it opens with delicate and refined notes of black pepper followed by fruity hints of amarena cherry jam and the characteristic aroma of vanilla typical of maturation in a wooden barrel. In the mouth it is well balanced, with the tannin still evident while not invasive and the soft elements easily perceptible.
The persistence finishes with pleasing bitter sensations on the palate. This is mature wine to accompany pasta dishes with meat sauce, Maccheroncini with lamb sauce or Tagliatelle with duck sauce, with pan-cooked white meats and medium-mature Caciotta cheese.
